1 Tbsp. of yeast
1/2 cup water
1 cup warm milk
1/2 cup honey
2 cups whole wheat flour
2/3 cup dry instant mashed potato
2/3 cup warm water
4 cups of white flour (for bread)
1 teaspoon salt
1 cup brown sugar
ground cinnamon
1/2 cup bleached raisins (optional)

1- Combine yeast and 1/2 cup warm water, set aside until foamy. Mix dry potatoes and 2/3 cup warm water. Add milk, honey, whole wheat flour and mashed potato mixture to yeast. Let stand for one hour or until bubbly.
2- Mix in white flour and salt to above mixture to make a soft dough. Knead on floured bread board for 5 minutes if your mixing has not been done in a mixer with bread dough hooks. Let dough rise until double, about one hour.
3- On a floured board, roll out into a rectangle about 1/2 inch thick. Brush with milk. Sprinkle with cinnamon, brown sugar and raisins. Roll up, starting with long side of rectangle, in jelly roll fashion. Cut into 12 equal pieces.
4- On a greased cookie sheet, arrange dough slices with cut side up and let rise for 45 to 60 minutes.
5- Bake in preheated oven 350 º F for 20 minutes or until lightly brown. Top with powder sugar icing.
(Grandmother didn't included this part of the recipe but I think you mix a little milk with powder sugar to a smooth consistency. Frost cinnamon rolls. )
