2 c. sugar
1/2 c. crisco
1 c. buttermilk
4 c. flour
3/4 c. cocoa
1/2 tsp. salt
2 tsp. soda
1 tsp. vanilla
1 c. water; boiling, held till end

FILLING:
1 c. milk
5 T. flour
1 c. sugar
1 c. crisco
1 tsp. vanilla

Preheat oven to 400º.

To Make Filling: Cook milk and flour in a saucepan over medium heat, stirring constantly until it becomes thick. Use a whisk and stir carefully so there are no flour clumps and the paste thickens to a smooth consistency. Do not rush or lumps will form. Remove from heat and let cool.

To make cookie: While filling is cooling, mix cookie ingredients in a large bowl with electric mixer until well blended, adding boiling water last. Using an ice cream scoop or 1/3 c. measuring cup, spoon cookie dough onto cookie sheets lined with parchment paper. Dough will not be firm, and should spread into round cookie shape. Bake at 400º for 8 - 10 minutes. Remove from oven to wire racks to cool.

To Finish Filing: Transfer the cooled paste mixture into a large mixing bowl. Add sugar, shortening and vanilla. Beat at high speed 5 minutes, until it increases in volume and becomes very smooth and fluffy. Make a cookie sandwich by talking two cookies and placing a "gob" of filling in between.
