2 T olive oil
8 oz andouille or other Cajun sausage finely chopped
1 c chopped onion
1 red bell pepper, cored, seeded, and finely chopped
1 fresh cayenne or hot red chile pepper, seeded and minced (~1 1/2 t)
2 cloves garlic, minced
1/2 t dried thyme leaves
1/2 t dried oregano
1/2 c tomato sauce
1/2 c beef broth
1/4 c fresh bread crumbs
2 lb ground beef
1 t salt
freshly ground black pepper to taste.

Heat oil in large skillet. Add sausage, onion, bell pepper, cayenne pepper, garlic, thyme, and oregano. Cook over low heat, covered, for 15 min. Transfer the mixture to a bowl, and cool to room temperature. Preheat oven to 350º. Stir tomato sauce, stock, and crumbs in cooled mixture. Break up ground beef and add it to mixture. Season with salt and pepper, and mix gently (do not overmix) until well blended. Pack mixture into a 9 x 5 x 3 inch loaf pan and bake 45 min. When done, remove pan from oven and pour off some of the fat. Cover the loaf loosely and let stand 10 min. Slice and serve.
