1 1/2 lb ground turkey (preferably 93% lean)
1/2 c finely grated Gruyere cheese
4 scallions, thinly sliced
1/4 c dried breadcrumbs
1/4 c Dijon mustard
1 garlic clove, minced
coarse salt and freshly ground pepper
vegetable oil for grates
4 hamburger buns.

Heat the grill to high. In a medium bowl, use a fork to gently combine the turkey with the Gruyere, scallions, breadcrumbs, Dijon mustard, and garlic; season generously with salt and pepper. Dividing the mixture evenly, gently form the mixture into four 1-inch-thick patties. Lightly oil the grill. Place the patties on the hottest part of the grill; sear until browned, 1-2 minutes per side. Split the buns and toast on the grill if you like; place a burger on each bun and serve with desired accompaniments.

This recipe has been passed down by generations of Norwegians and will make you pine for the fjords. No one has made these burgers with lutefisk since 1887, and I don't recommend trying it now. I put a lot of oil on the burgers to keep the turkey from sticking to the grill.
