1/2 cup finely chopped onion
1/2 cup finely chopped celery
1/4 cup finely chopped green pepper
1/4 cup butter
2 tbsp. of flour
1 tbsp. grated Parmesan cheese
1/4 tsp. salt and pepper
dash of Worcestershire sauce
dash of hot pepper sauce
1/2 cup finely crushed crackers (Ritz crackers suggested)
1 7-1/2 oz. can minced clams
1 tbsp. butter
Need 6-8 clam shells for serving.

Directions:
1- In medium skillet, cook onion,celery and pepper in 1/4 cup butter until tender but not brown.
2- Stir into above mixture the flour, cheese, salt and pepper, Worcestershire sauce and hot sauce.
3- Add 1/4 cup of crackers to skillet mixture. Cook and stir until mixture thickens and bubbly.
4- Divide among baking shells. Melt remaining butter. Sprinkle butter and remaining crackers on top of mixture in clam shells.
5- Bake in preheated oven 350º F for15 minutes. Before serving, garnish with parsley, if desired.
