1 lb. dried Great Northern Beans
1 meaty Ham Bone or 2 smoked Ham Hocks
3 Onions, chopped
3 Garlic cloves, minced
3 Celery ribs, chopped
1/4 C. fresh Parsley, chopped
1 C. mashed Potatoes or 1/3 C. Instant Potato Flakes
Salt and Pepper to taste

Directions:
Place beans in a saucepan and enough water to cover the beans; bring to a boil and boil for 2 minutes. Remove from the heat and soak beans in pot for 1 hour. Drain and rinse beans.
In a large stock pot, place beans, ham bone or ham hocks and 3 quarts of water. Bring to a boil. Reduce heat; cover and simmer for 2 hours.
Skim fat off, if needed. Add onions, garlic, celery, parsley, potatoes, salt and pepper; simmer for 1 hour.
Remove Ham Bone from the soup. Remove meat from the bone; dice and return the meat to the stock pot. Heat thoroughly, stirring often. Garnish with parsley or chives, if desired
