1 c red lentils
3 c water
1 t cumin
1 t chili powder
1 t salt
1 c shopped onion
1/4 c olive oil
1 clove garlic
2 t lime juice
2 T fresh cilantro.

Directions:
Directions:
Cook first 5 ingredients about 35 minutes, whisking frequently, until lentils are consistency of a puree. Meanwhile, saute the onion, oil and garlic until softened. Add lentil puree to onion mixture, remove from heat and add lime juice and cilantro. Can be served warm or at room temperature.

I got this recipe from Joan -- a wonderful cook, great friend and terrific nanny -- it is fabulous, easy, addictive and healthy, too. Serve with pita bread, pita chips or baguette slices.
