Cookie dough:
2 c. brown sugar
4 c. flour
1 tsp. baking soda
1 c. shortening
2 eggs
1 tsp. vanilla

Filling: 1 1/4 c. dates, finely chopped, 1 c. chopped nuts, 1/2 c. sugar, 1/2 c. water,

Directions:
Cookie dough: Mix dry ingredients, cut in shortening and add eggs and vanilla. Mix well. (This can be done with the hands. Dough will be very stiff.) Divide dough into 2-4 parts. Chill.

Filling: Combine filling ingredients in a saucepan. Cook to mush consistency; add chopped nuts and cool.

Roll dough on a floured board and spread with filling. Make a roll of dough and wrap with foil. Chill overnight.

Slice and bake at 350º.
