1 C. Butter, softened
1 C. Sugar
1 Egg, beaten
2-3/4 C. Flour
1 tsp. Vanilla Extract (or Almond Extract)

Directions:
Cream butter and sugar together. Mix in egg, flour and extract, until well blended. Take a small amount of dough and push it into the bottom and up the sides of the sandbakkel tin, repeat with remaining tins. Bake at 375º for 15 minutes, or until lightly browned. Let cool for a few minutes. Pinch tins to remove sandbakkels (do not allow them to sit too long in tins or they will not want to "pop" out).

These are puttsy because of the time it takes to put the dough into the tins. These taste similar to shortbread cookies.
