15 dry red chiles
2 cloves garlic
salt to taste

Main dish:
2 lbs sirloin or chuck steak, cubed
2-3 potatoes, cubed
3 Tbsp flour
1/4 tsp cumin
garlic powder
salt
pepper

Directions:
Directions:
Cover chiles with water in a large pot and boil for 15 minutes, until leathery. (Remove seeds if you want the chile to be mild.) In a blender, puree chiles with fresh water in batches. Strain into a saucepan. Add salt and garlic and simmer.

In a frying pan, brown meat and potatoes in oil. Flavor to taste with garlic powder, salt and pepper. Sprinkle with flour and continue to fry until oil is absorbed. Pour chile sauce over meat and potatoes and stir. Add cumin and cook for 10 minutes, stirring frequently.

Serve with tortillas and beans.
