Creme Puffs:
1 Cube Butter
1 Cup boiling water
1 cup flour
1/4 tsp salt
4 eggs

Shrimp Filling
2 - 8 Oz. pkg Creme Cheese
1 8 oz carton sour cream
1 TLB minces onion
Juice of one small lemon
1 can water chesnute (cup up)
2 TLB Mayonnaise
3 cans shrimp

Directions:
Creme Puflfs: Add butter to boiling water. Stir to melt butter. Add flour and salt all at once. Cook stirring vigorously until mixture is smooth and forms soft ballo that does not separate. Cool mixture slightly. Then add eggs one at a time. Beat vigorously after each egg. Beat mixture until smooth. Drop from a teaspoon on a greased cookie sheet and bake in hot over 450 degrees for 15 minutes then 300 degrees for 25 minutes. When cool, fill with shrimp filling.
** Shrimp Filling: Mix creme cheese, sour cream, onion and lemon juice & mayonnaise in mixter. Then fold in shrimp and water chesnuts. Mix by hand. Fill creme puffs.
