½ cup cocoa
¾ tsp baking soda
¼ tsp salt
1 cup sugar
½ cup unsalted butter softened
1 egg
½ tsp vanilla
¼ teaspoon mint extract

Filling:
2 ½ cups sifted powder sugar
½ cup unsalted butter softened
2 tbsp milk
½ tsp mint extract
Red and green food coloring

Directions:
Directions:
Sift together flour, cocoa, baking soda and salt in a medium size bowl, set aside. In a large bowl beat together sugar and butter until smooth and cream, beat in egg, vanilla and mint extract. On low speed beat flour mixture into butter mixture. Divide dough in half and shape each into a log about 1 ½ inches in diameter. Wrap in plastic wrap and refrigerate 3-4 hours. Heat oven to 375. Cut each log into slices about 3/16 inch thick and place on ungreased cookie sheet, bake 8-10 minutes or until almost firm. Transfer cookies to wire rack to cool. Filling: beat together powder sugar, butter, milk and mint extract in medium size bowl until good spreading consistency. Divide filling in half and tint half with red food coloring, and the other half with the green food coloring. Spread flat side of one-quarter of the cookies with red filling and one-quarter with green filling, top each with a plain cookie. Chill until set.
