6 eggs, separated
1/2 cu sugar
6 oz semi sweet chocolate (the bar kind)
3 Tbs strong coffee
1 tsp vanilla
1 1/2 cu heavy cream

Directions:
Directions:
Butter 11 x 14 pan and line with buttered waxed paper or parchment. Beat egg yolks; add sugar; put chocolate and coffee in a double boiler, melting chocolate. (may also use microwave, but go slowly, a few seconds at a time, and stir, removing when coffee and choc. are blended well) Cool mixture and add to egg yolks with vanilla. Beat egg whites till fluffy and stiff. Fold into chocolate mixture, gently. Pour into greased pan. Bake @ 350º 15 min until knife comes out clean. Cover with a damp towel for 20 min. Sprinkle piece of waxed paper with powdered sugar and cocoa. Turn cake out on paper. Pull of baking paper/parchment. Spread with whipped cream. Roll cake like a jelly roll, placing seam side down on platter. Sprinkle with powdered sugar. Slice servings into wheels. Enjoy. (low sugar, lower carb, high protien)
