2 cups salmon (1 - 1lb can)
1 Tbs lemon juice
2 tsp grated onion (white or red - I like red)
1 Tbs white horeradish
1/4 tsp salt or kelp
1/4 tsp paprika
1/2 cu chopped pecans
3 Tbs chopped parsley

Directions:
Directions:
Thoroughly mix all ingredients exept pecans (they should be finely chopped, as well as should be the parsley) Roll into a ball on wax paper (in the paper, make a ball) and chill several hours. Roll chilled ball in combined pecans and parsley. Re-chill until ready to use.

This may be frozen. Serve with a platter of raw veggies cut into bite sizes for scooping the salmon ball. This disappears quickly at gatherings, and is usually the main attraction. It is also good on crackers with soup for a light supper.
