Chicken - whole or leg quarters
2 tbsp. Jerk Sauce
Water
3/4 c. Olive Oil
1 c. Soy Sauce

Directions:
Cut up the chicken and put into a large pot, cover with water and 3/4 c olive oil, and 1 cup of soy sauce. Add jerk seasoning. Simmer for about 4-6 hours.

*Jerk is a Caribbean sauce, can be purchased in Specialty Food Stores.

You can cook in a slow cooker to save on energy.
When done cooking take the chicken out of pot and leaving the liquid. If you have leftovers you can put the chicken into the sauce and refrigerate.
