1 baked pie shell
1¼ cups sugar
6 tbsp. cornstarch
2 c. water
2 tsp. vinegar
1/3 c. lemon juice
3 egg yolks
3 tbsp. butter
1½ tsp. lemon extract

Never Fail Meringue
1 tbsp. cornstarch
½ c. boiling water
6 tbsp. sugar
2 tbsp. cold water
3 egg whites
1 tsp. vanilla
pinch of salt

Directions:
Directions:
Mix sugar & cornstarch together in top of double boiler. Add 2 cups water. Combine egg yolks with juice and beat. Add to sugar mixture. Cook until thick over boiling water for 25 minutes while stirring constantly. Add lemon extract, butter and vinegar and stir thoroughly. Pour into deep 9-inch pie shell and let cool.

For meringue:
Blend cornstarch and cold water in saucepan. Add boiling water and cook, stirring till clear and thick. Let stand till completely cold. In mixing bowl, beat whites on high speed until foamy. Gradually add sugar and beat until stiff but not dry. Turn mixer to low and add salt and vanilla. Gradually beat in cold mixture. Turn mixer to high and beat well. Spread over cool pie. Bake 350º for 10 minutes, then turn oven up a bit to brown meringue.
