1 egg
1 c. sugar
1/2 tsp. grated lemon peel
1 tsp. vanilla
1 c. + 2 tsp. flour
3/4 tsp. baking powder
1/2 tsp. salt
1/4 c. + 2 tsp. milk
1/4 c. melted butter
3 c. peaches or 1 pint blueberries

Preheat oven to 350º. Beat egg in a large mixing bowl and gradually add sugar, beating until creamy. Add lemon peel and vanilla. Sift together the dry ingredients. Gradually add the dry mixture alternating with the milk until well blended. Add melted butter, then pour the batter into a greased and floured 9-inch pie pan. Top batter with the fruit and then sprinkle with cinnamon. Bake for 40-50 mins. Best when served warm with ice cream or whipped cream.
