1/2 c. raisins
2 c. flour
1 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
1/8 tsp. nutmeg
2 c. shredded carrots
1 large apple shredded
1/2 c. nuts
1/2 c. coconut
3 eggs
2/3 c. oil
2 tsp. vanilla extract

Combine all dry ingredients, then add wet ingredients. Stir just until all ingredients are well combined. Line or grease muffin tins. Fill tins 2/3 full with batter. Bake at 350 for 20 minutes.
