1 lb. tilapia or other mild white fish, rinsed and patted dry
1/2 tsp. salt
1/4 c. canola oil
2 slices whole grain bread
1 T. parsley
1 tsp. minced dehydrated onions
1/2 tsp. garlic powder
1/2 tsp. dried dill weed

Directions:
Preheat oven to 450 F. Cut fish into 1-inch strips. Sprinkle with salt and toss with canola oil to coat. Place bread and remaining ingredients in blender or food processor; mix into fine crumbs. Transfer to a wide bowl. Roll fish strips in crumbs and place on cookie sheet. Bake for 10 minutes or until coating is brown and fish flakes easily with fork.

Another recipe from my friend, Jennifer Brugh. I usually leave out the dill or substitute with lemon pepper. Brendan just gobbles these up....with ketchup, of course!
