2 T olive oil
8 oz chicken breast
1/2 onion chopped
2 garlic cloves minced
1 can chicken broth
1 can corn
1 can black beans, rinsed and drained
1 t. cumin
1/2 t. salt
1/2 t. chili powder
1/8 t. cayenne pepper
1 can mild green chilies Mexican style tomatoes
2 cans green pepper style tomatoes
3 6in. corn tortillas cut into 1/2 in. strips baked at 400 degrees until crisp, OR broken tortilla chips
shredded cheddar cheese for topping

heat oil, add chicken, cook until opaque. Stir in onion and spices, cook 5 min. Add broth, corn, beans and tomatoes. Bring to boil and simmer 15 min.

Top bowls with cheese and tortilla strips
