1 c. chopped onion
1 c. iced green bell pepper
2 garlic cloves minced
1 lb. boneless skinless chicken breast cut into 1/2 in. cubes
1/4c. chopped fresh cilantro
1/4c. strong brewed coffee
1 T. chili power
1 t. brown sugar
1/2t. ground red pepper
2 15oz. cans kidney beans, rinsed and drained
1 28oz. can diced tomatoes
1 T. ground cornmeal
3 T. water

heat Dutch oven med. heat. coat with cooking spray. cook onions, bell pepper and garlic about 5 in until onion translucent. Add chicken to pan, cook 5 min. stirring often. Add cilantro and next 6 ingredients, stirring to combine, bring to a boil. Cover, reduce heat and let simmer 10 minutes. Combine corn meal and three tablespoons of water in small bowl. And to chicken mixture, stirring well to combine. Simmer uncovered 10 min.

This is yummy and healthy. I recommend adding more red pepper flakes than suggested if you like spicy
