Dough: 1 3/4c. flour, 2 eggs, 1/4t. salt
Filling:
2lbs. ricotta,
1/4t. onion powder,
1/8t. salt,
1 egg,
1/2c. grated Parmesan cheese

Directions:
Directions:
Filling- Mix all ingredients together and set aside. Dough- Combine salt in flour add eggs and mix well, until firm and smooth. Put under bowl let rest 15 minutes, then knead repeat three times. Roll through pasta machine to 1/8" thick, 4" wide, 8" long, boil 3 to 4 pieces at a time for two minutes remove and pat dry. Place heaping tablespoon of filling on end and roll up. Place in pan and cover with sauce, sprinkle cheese on top cover and bake at 350º for 45 minutes to 1 hour.
