1 pint half and half
Salt and pepper to taste
1-2 onions, chopped (depending on your liking)
2-3 lb. Velvetta cheese, cubed
Cheddar cheese, shredded (as much as you like)
1-1/3 stick margarine, melted
48 oz. frozen hash browns

Directions:
Directions:
Spray a large oblong baking dish with Pam. Place frozen hash browns in baking dish. Season with salt and pepper. Stir in chopped onions. Set aside. In a large microwave safe bowl, place cubed Velvetta cheese, margarine and half and half together. Cover and mircowave, stirring halfway through until melted. Use caution. Cheesy mixture will be very hot. Pour Cheesy mixture on top of frozen hash browns and onions, so that melted cheese is evenly distributed over casserole dish. Sprinkle shredded cheddar cheese on top using as much as you like. Bake in preheated 350º oven for 1 hour.
