2 lb. elbow macaroni (cooked according to package directions)
2 lb. extra lean hamburger
butter or margarine for cooking veggies
3 large onions, chopped
1 large green pepper, chopped
6 ribs celery, chopped
4 (29 oz.) cans tomato sauce
pepper to taste

I tend to be generous with the veggies. often going over the amounts in the recipe. Cook elbow macaroni according to package directions. Drain. Return cooked macaroni to same large stockpot. Meanwhile, brown hamburger in a skillet and drain grease. Add hamburger to macaroni. Next, saute onions, green pepper and celery in butter or margarine until tender. Add veggies to stockpot, along with macaroni and hamburger. Add tomato sauce and mix well. Simmer for about 20 minutes, or until heated through. May need to add additional tomato sauce and/or pepper to your liking.

Kaleigh, Ashley and Travis can't get enough of this main dish casserole. It was their favorite lunch while at Shirley's Daycare, hence the name. They still love it even today. I dedicate this recipe to the three of you. Remember Shirley and enjoy.
