3 eggs
2 cups sugar or 1 cup honey
2 cups grated zucchini
1 cup vegetable oil
2 t. vanilla
3 cups unbleached flour
1/2 cup chopped walnuts
1 t. salt
1 t. baking powder
1 t. baking soda
2 t. cinnamon
1/2 t. nutmeg
1/4 t. ground cloves

Directions:

Butter the bottoms of two 9x5" loaf pans. In a large bowl, beat eggs until foamy. Stir in sugar or honey. Add the zucchini, oil and vanilla. Stir in the dry ingredients with a wooden spoon until blended. Stir in the nuts. Pour batter into both pans and bake for 1 hour at 325°F. Cool in pans on wire rack for 20 minutes then remove from pans.
