4 lbs. Golden Delicious or Granny Smith apples
2/3 cup sugar
3 T. fresh lemon juice
4 oz. water
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1 1/2 tsp. vanilla extract

Directions:
Directions:
Peel, core and chop apples. Sprinkle sugar over them. Combine lemon juice and water. Pour over apples; stir gently.
Transfer apples to saucepan. Bring to boiling; cover and reduce heat to low. Cook 10 minutes or just until apples are soft, not mushy.
Stir in cinnamon, nutmeg and vanilla.
Puree 1/3 of apples and cooking liquid in food processor or blender, until almost smooth. Return to saucepan. (I use my immersion blender).
Cool or serve warm over ice cream, pork or lamb chops, or as a side dish to burgers or sandwiches. Yield: 1 1/4 quarts
