2/3 cup butter or margarine
2/3 cup flour
7-8 cups skim milk
4 large baking potatoes, baked, peeled and cubed (about 4 cups)
4 green onions, sliced
12 bacon strips, cooked, crisp and crumbled (or jar of real bacon pieces)
1 1/4 cup shredded cheddar cheese (may use reduced fat)
3/4 tsp. salt
1/2 tsp. pepper
1 cup sour cream (may use fat free)

Directions:
Directions:
In a large pan, melt butter. Stir in flour; heat and stir until smooth (at least 1-2 minutes). Gradually add milk, stirring constantly until thickened slightly. Next, add onions and potatoes and bring to a boil, stirring constantly. Reduce heat and simmer for 10 minutes. Add all remaining ingredients, EXCEPT SOUR CREAM and stir until cheese is melted. Lastly, add sour cream and mix well. Serves 8-10. Great recipe for freezing.
