8 chicken breast halves, skinned and boned
3/4 cup flour
1 t. salt
1/4 t. pepper
1/4 cup vegetable oil
13 1/2 ounce can pineapple chunks, reserve the juice
1 cup sugar
2 T. cornstarch
3/4 cup white vinegar
3 T. soy sauce
1/4 t. ginger
1 chicken boullion cube
1 green pepper, seeded and cut into thin strips

Add water to reserved pineapple juice to measure 1 1/4 cup. Shake chicken pieces in the flour, salt and pepper to coat. Brown the chicken in 1/4 cup oil. Place browned chicken in a shallow baking dish. Place the remaining ingredients (except pineapple and peppers) in a saucepan. Cook until the sauce thickens. Pour over the chicken and bake at 350 degrees for 30 minutes. Remove chicken from oven and top with pineapple and peppers. Return to oven and bake an additional 30 minutes. Serve hot over rice.
