2 packages frozen chopped spinach
1 small onion, finely chopped
3 T. butter
1/2 t. salt
1/2 t. nutmeg
dash pepper
1 fifteen ounce container of whole milk ricotta cheese
1 cup heavy cream
1/2 cup grated Parmesan cheese
3 eggs
2 eight inch baked* pie crusts

Directions:
Directions:
Cook spinach for 3 minutes and drain very well. Chop onion and saute in butter until tender. Add the spinach and the spices. Combine the remianing ingredients in a separate bowl and add to the spinach mixture. Mix well. Pour into the two baked pie shells and bake at 350 degrees for 50-60 minutes or until set.
