1 ten ounce package frozen chopped spinach
1/4 cup unsalted butter
3 T. flour
1 cup milk
1/2 t salt
1/8 t. nutmeg
1/8 t. pepper
1 cup shredded Swiss cheese
1 cup button mushrooms (cleaned, stemmed and finely chopped)
1 T. grated onion

Cook spinach according to directions on package and drain very dry. Set aside. Melt butter in saucepan over low heat and blend in flour with a whisk. Cook stirring for 3-4 minutes. Gradually add milk and cook, stirring for 6-8 minutes or until thickened. Add spinach and remaining ingredients and cook for five minutes. Cool and fill crepes with a tablespoon of filling. Roll up, leaving ends open, and place seam side down in a buttered shallow baking dish. Brush with melted butter and sprinkle with Parmesan cheese. Bake at 375 degrees for 15-20 minutes or until cheese is lightly browned. Yield: Filling for 12 crepes.
