1 lb. spaghetti
1 head broccoli, trimmed and cut into 1" pieces
1/3 cup olive oil
2-4 cloves garlic, crushed
1/4 t. crushed red pepper flakes
1 medium tomato, cored and chopped (1 cup)
1 jar roasted red peppers, rinsed an drained and cut into 1/8th" strips
Parmesan cheese

Directions:

Cook spaghetti for 3 minutes. Add broccoli and cook until spaghetti is al dente and broccoli is tender-crisp. Drain. Heat oil in in a medium skillet and add the garlic and the red pepper flakes. Saute for 1 minute. Stir in the tomato and simmer for 5 minutes. Add the roasted red pepper and heat through. Toss sauce with spaghetti and broccoli. Serve with Parmesan cheese.
