3 T. olive oil
3 large thinly sliced onions
2 seven ounce jars roasted red peppers (drained)
2 t. chopped fresh thyme leaves
1/2 cup ricotta cheese
2 T. tomato paste
1/2 cup grated Parmesian cheese

Directions:
Directions:
Heat oil in pan over medium low heat. Add onions and cook until very soft and slightly golden. Do not brown. Add the peppers, thyme and tomato paste. Cook, stirring often, for five minutes. Let cool slightly. In a food processor or blender, mix mixture with Parmesian and ricotta cheeses until pureed. Transfer to a serving bowl and cover. Serve at room temperature or chilled with vegetables, crackers or bread.
