1 unbaked pie crust in a pie dish
1 cup shredded Swiss cheese
1 T. flour
6-18 strips crisp bacon or 1 cup ground ham
1/2 cup minced onion
4 eggs
2 cups half and half
pinch of nutmeg
pinch of sugar
pinch of cayenne pepper
3/4 t. salt

Preheat oven to 400 degrees. Prick surface of pie crust with a fork and place in refrigerator while preparing the rest. Dredge cheese in the flour. Cut bacon into tiny pieces. Saute the onion in the bacon grease (or oil) until soft. Distribute onion and bacon over bottom of the pie crust. Cover with the cheese. Beat the eggs with the cream and the spices and pour into the pie shell. Bake at 400 degrees for 10 minutes then reduce the heat to 350 degrees and bake for 1 hour.
