1/2 cup wild rice
1 can chicken broth
10 slices bacon, fried and chopped
1 small onion, finely chopped
1 T. vegetable oil
2 cans cream of potato soup, undiluted
1 quart half and half
1 1/2 cups cheddar cheese, shredded

Directions:
Directions:
In a 2 1/2 quart saucepan, combine the rice and the broth. Cook covered until tender, about 45 minutes. Saute bacon and onion in the oil for about 1 minute. Add bacon and onion to rice and toss with fork. Add the two cans of soup and the half and half. Heat thoroughly but do not boil. Sprinkle cheese on top and warm until cheese melts. Stir and serve hot.
