To make the ginger syrup:

1/4 cup sliced fresh ginger with skin
2 cups granualted sugar
2 cups cold water

To make the peach puree:

10 ounces semi-frozen peaches
1/2 cup ginger simple syrup

For serving:
Ice cubes
Champagne

Directions:
Directions:
Begin by making the syrup. Peel and grate the ginger. Add it to the sugar and cold water on a saucepan. Bring to a boil and stir until the sugar dissolves. Turn heat off. Cover and let steep for 15 minutes. Strain and discard the ginger pieces.

In a blender add the frozen peaches and ther syrup. Blend until completely pureed. Place in refrigerator to cool.

To serve:

Add ice cubes to a coctail shaker and fill half way with the peach puree. Top off with Champagne and shake vigorously to combine. Pour into Champagne glasses and garnish with a slice of fresh peach if desire. Repeat process as needed.
