1 lb. crabmeat ( I use jumbo lump)
4 T. butter
4 T. flour
1/2 pint cream
4 T. sherry
3/4 cup sharp grated cheese (white)

Directions:
Directions:
Make a cream sauce by melting the butter and whisking in the flour. Cook for one minute over medium heat and then gradually whisk in the cream. Once thickened add the salt, pepper and sherry. Once heated through remove the pan for the heat and add the crabmeat. Pour the mixture into a buttered casserole or individual ramekins and sprinkle with cheese. Cook at 400F until the cheese melts. Do not over cook.
