1 large eggplant
4 onion, chopped fine
1 chopped green pepper
pinch of dill
juice of 1/2 lemon
1 T. sugar
1 small can of tomato paste
3 T. vegetable oil
salt and pepper to taste

Directions:
Directions:
Prick the eggplant with a fork in several places. Bake for 2 hours at 375 degrees. Peel and chop fine. Brown onoins in 1 T. of the oil. Add remaining ingredients and mix well. Bake uncovered in a greased casserole for one hour at 375 degrees. Chill and serve with crackers.
