Ingredients:  
1 large head of Boston lettuce (can use green leaf)
6 strips of bacon, crisp
4 large scallions, minced
1 large can of mandarin oranges, drain but reserve the juice
mayonnaise

Directions:
Directions:
Break up washed lettuce into a salad bowl. Crumble crisp bacon on top and then sprinkle with scallions. Evenly distribute oranges on the top.

Dressing:

mayonnaise thinned with reserved mandarin orange juice
salt and pepper to taste

Whisk together well and drizzle over the salad.

I made up this salad for Easter 1987 and served it with beef burgundy and crusty French rolls. It was success!
