1 envelop plain gelatin, dissolved in 1/2 cup cold water
1/2 cup sugar
1 1/2 cups pineapple juice
pinch of salt
2 T. white vinegar
2 T. fresh lemon juice
1 cup crushed pineapple
1 cup chopped cucumber, peeled
1 t. green food coloring

Pour sugar and pineapple juice over gelatin. Bring to a boil. Cool slightly and add the remaining ingredients. Pour into a mold and chill until firm (about 4 hours).
