1 1/4 cups flour
pinch salt
3 eggs, beaten
1 1/2 cups milk
2 T. unsalted butter, melted

Directions:
Directions:
In a large bowl, combine flour and salt. Add eggs into the center and toss together with a fork for a couple seconds. Blend the melted butter into the milk and whisk into the flour. Cover and refrigerate for at least two hours (or even overnight).

Using a small skillet, heatand grease with vegetable oil. Put a spoonful of batter in the skillet and tilt the pan so it is coated with the batter. As soon as it sets, flip the crepe over for a few seconds and continue until you have 12 crepes.

This recipe is easily doubled or tripled. Good filled with classic spinach filling or shrimp creole.
