2 lbs. fresh asparagus
2 scallions, chopped fine
6 black olives, chopped fine (can use green or both)
1 T. capers
1/2 t. thyme
1/3 cup red wine
1/4 cup wine vinegar
3/4 cup extra virgin olive oil
1/2 t. pepper
1 t. salt

Directions:

Cut woody parts off asparagus and rinse well. Cook until tender crisp and drain. While still warm pour over a dressing made by combining all the remaining ingredients. Chill and serve over crisp lettuce.
