1 1/2 lb. fresh green beans, cut into 2" pieces
water
3 T. vegetable or olive oil
grated peel of 1/2 lemon
juice of 1 lemon
1 medium onion, cut into thin wedges
1 four ounce jar sliced pimentos, drained
1/4 t. garlic salt
1/4 t. white pepper
freshly grated Parmesan cheese

In a large saucepan, cover beans with 2" of water and bring to a boil. Reduce heat an briskly simmer for 10 minutes or until just tender Drain well and rinse with cold water to stop the cooking process. Set aside. In a large bowl, combine the other ingredients (except the Parmesan cheese). Add well drained beans and chill stirring occasionally. Sprinkle with cheese when serving.
