1 stick unsalted butter
3 chopped medium leeks, white part only
2 ribs celery, diced
4 large carrots, peeled and diced
1 cup canned pumpkin
4 cups chicken stock
salt and papper to taste
chopped chives (garnish)

Directions:
Directions:
Melt butter in stock pot. Saute leeks, celery and carrots until soft. Add pumpkin, stock and seasonings and stir until smooth. Simmer for 30 minutes or until vegetable are very tender. If a thinner consistency is desired add a liitle dry sherry or some cream. Garnish with chives and serve hot.
