2 1/2 lbs. lean stew beef
1/2 to 1 cup flour
1 T. salt
1 t. pepper
2 T. vegetable oil (or bacon fat)
1 large onion, chopped
1/2 to 1 cup boiling water
1 to 1 1/2 bunches of carrots
6-8 large potatoes
1/2 cup flour made into a paste with cold water

Shake beef cubes in flour, salt and pepper to coat. Brown beef in oil (or bacon fat) in two batches so as not to crowd. Place browned beef into stockpot. Brown onions in the fat used to brown meatand add to stockpot. Pour 1/2 to 1 cup boiling water into browning pan and let soak. Pour this liquid into stockpot with the beef and simmer for at least 2 hours. Add carrots. Thirty minutes later add the potatoes. Cook until tender. Mix the flour soaked in cold water to the stew to thicken.
