2 cups sugar
1 cup vegetable oil (canola)
4 eggs
2 cups flour
2 t. cinnamon
1 1/2 t. salt
1 1/2 t. baking soda
3 cups grated carrots, about 6 large
Cream cheese frosting:
8 ounces softened cream cheese
1/2 stick butter
1 t. vanilla
1 lb. powdered sugar
1/2 cup chopped walnuts and or coconut (optional)
Beat together the first four ingredients until the consistency to spread. Frost the cooled cake in the pan and sprinkle with nut and/or coconut if desired.

Mix together in the order listed. Pour into a greased and floured 9x13" pan and bake at 325°F for about 40 minutes or until cooked. Cool completely and frost with the following:
