1 lb. beef steak
4 tbsp. soy sauce
1 tbsp. corn starch
1 tbsp. sherry
5-6 tbsp. cooking oil
1 small onion sliced
1 clove garlic chopped
1/2 lb. pea pods
2 oz. mushrooms (optional)
2 oz. water chestnuts sliced

Directions:

Cut the beef across the grain into thin 1/4 inch slices. Mix beef with soy sauce, sherry, garlic and corn starch. Set aside. Meanwhile, remove stems and strings from pea pods, rinse and pat dry. Add 2 tbsp. oil in hot skillet. Add onion, water chestnuts, pea pods and optional mushrooms. Stir constantly until pea pods are tender about 1-2 minutes. Remove pea pods and all the veggies into a container. Heat the skillet, add oil. When oil is hot, add the beef mixture. Stir beef and cook to suit your taste--rare, medium, well done. Next, add veggie mixture to the beef. Mix well. Serve on or with rice.
