1 Cup Sugar
1 egg
1/2 Cup Shortening
1/2 Cup grated zucchini
2 Cup Flour
1 tsp Baking Powder
1/2 tsp Salt
1 tsp Soda
1 tsp Cinnamon
1/2 Cup Pineapple Drained
1 tsp Vanilla
1/2 Cup Dates
1/2 Cup Raisins
1/2 Cup nuts

Beat sugar, egg, shortening and zucchini. Sift together flour, baking powder, salt, soda and cinnamon. Mix together. Add pineapple and Vanilla. Fold in dates, raisins and nuts. Bake at 375 degrees for 12 minutes

**Note: Can Double for bigger batch **
