1 Eggplant
1 lb ground beef (browned)
1 small onion
2 cloves garlic
1 8oz can tomato sauce
1 tsp cinnamon
Salt & Pepper

4 eggs
2 cans Aunt Pennys white sauce
2/3 c milk

4 large potatoes (par boiled and sliced)
Directions:
Directions:
Mix together ground beef, onion, garlic, tomato sauce, cinnamon, and salt/pepper. Set aside.

Slice eggplant and layer on a cookie sheet. Spray each slice with cooking spray. Bake in oven 350º for about 10 min until cooked.

Spray bottom of 9x12 dish with cooking spray. Spread parmesan cheese on bottom of pan. Layer with 1/3 sliced potatoes, 1/3 meat mixture, and 1/3 of 1/3 of eggplant slices. Repeat.

Beat eggs. Add white sauce and milk. Pour on top of layers. Bake at 350º for 35 minutes.
