Sift together:

2 cups flour
½ tsp. salt
1-1/2 tsp baking powder
½ tsp. baking soda
1 cup sugar

Add:

1 egg, beaten
1 Tbls. melted shortening (or olive oil)
½ cup orange juice
2 Tbls. hot water

Combine only until dry ingredients are moistened.

Fold in:

½ cut nuts (I use walnuts), if desired
1-1/2 cups cranberries
1 Tbls. orange rind

Directions:

Pour into a greased 4x8 inch loaf pan.

Bake at 325 degrees about 1 hour, 10 minutes.
