8 eggs
2/3 C sugar
1/4 t salt
2 tall cans evaporated milk
2 t vanilla or light rum or brandy
1/2 C light brown sugar

Directions:
Beat eggs with hand beater until blended. Mix in sugar and salt. Beat in milk and flavoring. Press brown sugar into loaf pan and pour custard carefully over it. Place loaf pan in a shallow pan of hot water. Bake 1 hour at 350* or until set. Do not cover.
Refrigerate overnight. Rim with knife and turn upside down on a serving plate. Let stand for a few minutes upside down to allow melted brown sugar to run down, then remove loaf pan.
